I know there's a website called "Is It Vegan" but I find their list to be somewhat limited so I thought I would start a new thread where we could ask/answer "Is It Vegan".
Here are the ingredients that I'm wondering about tonight:
Lactic Acid
Calcium Sulfate
Calcium Citrate
Calcium Propionate
Are they vegan?

This is a pretty comprehensive list:
http://www.vegfamily.com/lists/animal-ingredients.htm
I can't find anything on any of those calcium ones but Lactic Acid is as follows:
Lactic Acid.
Found in blood and muscle tissue. Also in sour milk, beer, sauerkraut, pickles, and other food products made by bacterial fermentation. Used in skin fresheners, as a preservative, in the formation of plasticizers, etc. Alternative: plant milk sugars, synthetics.
In other words, it might be vegan and it might not. You need to check with the manufacturer.

I think calcium sulphate comes from gypsum. Not sure if it comes from animal sources, too. Probably unlikely to.
Calcium Citrate is from citric acid, from citrus fruits.
Not too sure about propionate.

See this thread, (http://www.thenakedvegan.net/showthread.php?t=35) folks. Though I don't see calcium propianate listed, or sulphate.

Calcium propionate is prepared by hydrolyzing propionitrile with calcium hydroxide, resulting in calcium propionate and ammonia. After the removal of ammonia, the reaction mixture is neutralized with propionic acid, which reacts with excess calcium hydroxide to form additional calcium propionate. In comparison, 21 CFR 184.1221 specifies that calcium propionate be prepared by neutralizing propionic acid with calcium hydroxide. Solutia estimates the daily intake of calcium propionate at 0.22 grams per person per day. Because Solutia's calcium propionate will substitute for the uses of calcium propionate prepared as in 21 CFR 184.1221, total daily intake of calcium propionate is not expected to change from the current level.
Propionic acid is a breakdown product of sugar. It looks like propionitrile is a synthetic substance. Calcium hydoxide is lye.

Actually, its all just to inhibit a little mold. That's why its better to buy fresh baked goods without all those chemicals, and eat them up before they go moldy. Or just store them in the firdge or freezer.
