I found this on a raw food (http://www.learnrawfood.com/easyrecipes.htm#almondcream) sight. Tried it this morning and it was fantastic.

Berries and Almond Cream
Makes 1 serving

Ingredients

* 1 cup mixed berries (such as blueberries, blackberries, raspberries, or sliced strawberries)
* 1 tsp maple syrup
* ½ cup Almond Cream (see below)

Equipment

* small bowl
* measuring cups and spoons
* spoon

Directions

1. Place the berries and the maple syrup in a small bowl. Toss gently.
2. Top with the Almond Cream. Serve immediately.


Almond Cream:
Almond Milk
Makes 2 cups, 4 servings

Advanced Prep
Soak 1 cup almonds for 8 hours, or overnight.

Ingredients

* 2 ½ cups water
* 1 ½ cups soaked almonds (1 cup before soaking)
* 3 dates, pitted
* ½ tsp vanilla extract

Equipment

* blender
* fine-mesh strainer
* medium-sized bowl
* measuring cups and spoons
* spatula

Directions

1. Place 1 ½ cups water, the almonds, the dates, and the vanilla extract in a blender.
2. Blend on high speed until smooth.
3. Add the remaining 1 cup water and blend until smooth.
4. Pour the almond mixture through a fine-mesh strainer set over a medium-sized bowl. Using a spatula, stir and press the pulp that is caught in the strainer, to extract as much milk as possible into the bowl.
5. Discard the pulp left in the strainer, and store the milk in a sealed container in the refrigerator.
6. Almond Milk keeps for five days. It naturally separates, so shake well before using.

Almond Cream
Add only ½ cup water in step #3.

sounds really good, it sounds like a lot of flaffing around first thing in the morning.MMM me thinks i could do it the day before.:dribble: :eat:

Yes, it sounds really nice. I'll send the recipe to my sister mainly because she is interested in trying almond milk and will be able to make her own. I know there are recipes for almond milk but I didn't get round to looking for them.

I sliced a bunch of fruit today and drizzled the maple syrup over it, then put the mixture in the fridge. I'll take that and the pre-made almond milk to work tomorrow for a nice light breakfast.

Almond milk can be simple. I just throw a handful of sprouted almonds into the blender with a bit of water, whiz, and sweeten to taste with some vanilla-flavored stevia. I don't use as many almonds, so I find it doesn't need straining, and I can make as much or as little as I want, so I don't need to store it.

This is really good when, after you've been raw for a while and really want something cooked, or if you are trying to go raw in the cold weather, to just warm it on the stove, stirring with your finger so you don't let it get too hot, and then adding a bit of cinnamon and ginger.

I've been wanting to try sprouting for quite awhile and just never seem to get around to it.
I'm going to make it my goal to eat more raw foods, lay off the refined carbs and to try sprouting.

Raw Granola from the cookbook "Raw Food Made Easy (http://www.learnrawfood.com/mybook.htm)" by Jennifer Cornbleet

1/4 cup soaked raw almonds
1/4 cup soaked raw sunflower seeds
1/4 cup soaked raw walnuts
4 pitted dates, chopped
1/4 teaspoon ground cinnamon
dash salt

Place the almonds, sunflower seeds and walnuts into a blender and pulse until coarsely chopped. Add the dates, cinnamon and salt and process briefly to mix.

I put mine in a warm oven to crunch it up a bit (I think it's still raw as I doubt it got up to 180 degrees). I let it sit out overnight, again to crunch it up. Then I added some dried bananas.

It's yummy over fruit. The book says it will last for a few days in the fridge.

How long do the almonds and sunflower seeds soak?

Almonds: 8-12 hours
Walnuts: 4-6 hours
Sunflower Seeds: 6-8 hours

They expand when they've been soaking so if you start with a quarter cup of each, you'll end up with slightly more than 1/4 each.

I was staying in a B and B in Somerset once and had a fry up for my breakfasts. Veggie sausages, baked beans, fried bread, toast, potato waffles, tomato, and mushrooms. I didn't need to eat anything again until the early evening.

My breakfast routine...

- open sandwiches with Veganaise, sprouts, tomatoes, Tofurky and avocado.
- toasted waffles with margarine, banana and sprinkles of cinnamon on top.:dribble:
- toast with peanut or almond butter.... and lots of COFFEE!!

I always have freshly squeezed fruit juice and fresh fruit for breakfast, all year round. :) Soon be mango season. :yum:

Ive just had a good fry up of fried pots, mushrooms,toms, fried bread and two veggie sausage.

Waffles with banana sounds lovely. Not sure about the cinnamon though.

I like peanut butter sandwich with plain crisps (not for breakie though).

I had banana on toast for my breakfast.


I will have a look to see if potato waffles are still vegan. They are nice heated in a frying pan. No need to put any oil in as they have olive oil in them. Heat up two and put them on slices of bread on a plate. Then dollop baked beans or tinned tomotoes on them. And pour a bit of olive oil on top. The bread should be spread with margarine and tahini.
