Does anyone have a vegan recipe or actually made these that taste good??
These are one of the only dairy things which I really miss and are also high in fat/sugar content.
Surely these can be veganised, but still be tasty, light and less unhealthy?

I can't remember what goes into shortbread, except butter, so I guess it all hinges on how tasty your vegan margarine is, and whether it has enough fat in it to behave the same way. I would experiment with Earth Balance, but I made too much cake after I got that cupcake book, so I've sworn off sweets for a while. :o
how about adding fruit to it instead of sugar for the sweetness.
Preparation time less than 30 mins
Cooking time 10 to 30 mins
Ingredients
125g/4oz butter
55g/2oz caster sugar
180g/6oz plain flour
Method
1. Heat the oven to 190C/375F/Gas 5.
2. Beat the butter and the sugar together until pale.
3. Stir in the flour to get a smooth paste. Turn on to a work surface and gently roll out until the paste is 1cm/½in thick.
4. Cut into rounds or fingers and sprinkle with a little extra caster sugar. Put on a baking sheet and chill for 20 minutes. Bake in the oven for 15-20 minutes until pale golden. Cool on a wire rack.

Good point about the marge - I will keep that in mind.
Also interesting idea about fruit - sugar is overused in many recipes where many other substitutes could be used. Blueberry shortcake springs to mind as a tasty treat.
The idea for this thread was triggered, when I saw some chocolate caramel shortbread, and figured that could be non-dairy. :yum:

Sainsburys (Cool Britannia) have new Freefrom (gluten, wheat, dairy free) shortcake.
I handed over my hardearned cash to get my sweaty mitts on a packet-and they tasted great. Very light, fluffy, crunchy and authentic!!

maybe get the list of ingreadients from the packet and try making your own

Maybe, but maybe not- I am too lazy for that ;)
But out of interest Rice Flour, Vegetable margarine and Rapeseed oil were used.
