When I was omni, I would use whipped egg white to glaze pies. This made for a really nice shiny, crispy topping. Any ideas for a vegan version?
i just use soya milk brushed on top

Does it give it a shiny glaze?
im sure it does, it might depend on the soya milk you use, i know tonight it wasnt shiney(but i did burn them) other times it does.
ive used maple syrup for roast veg, etc, that gives a shiny glaze ,not sure if it would work on a pie:sigh: :rubchin: :dizzy: :stir: :crossfingers:

I use "Silk". I'm excited to try it.
I also make perogi's and I really like them to have that shiny look. Don't know why, but I like them like that.
is silk a type of soya milk, and what are perogi's:dizzy: :hbang: :dunce:

Yes, "Silk" is soy milk.
Perogi's are a russian (I believe) pastry that is stuffed with whatever you want. I stuff them with potatoes, mushrooms, onions, garlic.

I will try agar agar someday - just a weak solution of it brushed over. I think it is the proteins in the milk that form the skin - so maybe milk with an agar boost will give that browning shine?

I think I'm the only vegan that's never tried agar agar.
Is it a sweetener?

Agar agar is a type of seaweed. Very nutritious and works great as a gelling agent. You can make vegan jello with agar-agar or vegan mousse. Expensive but a little goes a long way.

I never used the power, only the flakes. The flakes are sold with sea veggies in the health food store or you can get it even cheaper in an Asian grocery store.

I'm going to the store today so I'll try to find some.
My daughter is having a gum graph later today and I need to make her some soft foods. Jello would be nice.
