This was dinner tonight. The main dish is: red & yellow peppers, onions, black olives, garlic, rosemary, basil, thyme, salt & pepper on phyllo dough.
With it, we had roasted potatoes and salad. And, no, my carpet is not blue...I don't know why it turned out that way. Probably too much light.

Baked Tofu, Green Bean Casserole and Salad. :hungry:

I only use half of the stock, all of the tofu, and "Follow Your Heart - Monterey Jack" soy cheese. With the soy cheese you'll need to bake it at around 425 or the cheese won't melt.
Also, this is the stock that I use for both the green bean casserole and the baked tofu.

Thanks! It really is one of my favorite things to make. The sauce from the tofu dish makes a really good sauce for potatoes as well. I've actually made scalloped potatoes with it.

whole long grain rice (organic), with, bag of mixed "italian" veggies, added two small zuchinni's to that and two cloves of garlic, some dried basil and fresh shredded ginger, one (roma) tomatoe... and the sprouted adzuki beans I "found"

:) For a second, 1V, I thought you had posted that you loved your work then I read it correctly as wok.
Looks healthy and good. :eat: Mr. Vegantwins is big on frozen organic veggies. He hates to cook so he makes himself (and the kids) for lunch daily a pound and a half of organic broccoli in a special seasoning mix (I prepare in bulk), lemon juice, olive oil and nutritional yeast. :broccoli:

Adzuki are a sweet, small red bean that taste really nice.
other names for adzuki beans. adsuki, aduki, asuki, azuki, chi dou (Mandarin), feijao, field pea, hong xiao dou (Mandarin), red oriental, Tiensin red.
give sprouting a go, its so easy once you have got into a routine:eat: :hbang:

My immersion blender arrived today :psing:
I had no choice but to make soup for dinner :hungry:
I found some stuff in the kitchen;
a red beet, a few carrots, a small zuchini, two cloves of garlic, some dried basil, some salt, half a pumpkin, a handfull of pumkin seeds, and a small head of broccoli (and 2.5 cup of water)
Boiled a bit shortly, then used the blender and got it nice and smooth :)
It's nice and thick too, it's almost pasta sauce ;)

That looks great, 1V! I love my immersion blender for making soup. I couldn't be bothered with transferring a hot, cooked soup to the blender and blending it in batches, it's so much easier popping the blender into the pot.

I just throw veggies into a pot with some spices. I sometimes add grains after its been pureed. Very easy. I bought my Braun immersion blender probably 10 years ago for $10 and it's still going strong.

I'm so scared of cooking without a recipe. I really need to just go for it and see what comes out of it.
sometimes i just chuck everything in, other times i use a recipe,then i usually adapet it for my taste, add this take this out etc.:D

I bought an immersion blender the other day. It's so much easier than transferring small amounts to my food processer. The one that I bought came with a 16 oz plastic cup with lid. Each night I've been taking out some frozen fruit and letting it thaw a bit overnight in the cup. Then, in the morning I add some soy milk and ice and mix it all up to make my smoothie. I was really struggling with my blender to make smoothies and this is working out really well!
Yeah for me!

it's exactly the reason why I bought an immersionblender to complete my food processor.
Guacemole made with only 1 avocado doesn't work in a 33oz processor.

broccoli, carrot, red bell pepper, some garlic, dried basil, cumin, coriander, flaxseed, pumpkin seeds, shredded coconut.
mixed in the foodprocessor, then heated up a bit, not to boiling point, but too hot for rawfood

I want to learn to do more raw food, but feel insecure about it.
Especially with non organic vegetables, I wonder if there would be residues of pesticides on it :o
And I don't know if I work hygenic enough for real raw food.

I bought an immersion blender the other day.
I didn't know what this was until I looked it up. I might buy one. Using a blender is a bit of a pain as they are difficult to wash. I had the good intention of making lots of soup but, once I've cooked the vegetables, the thought of cleaning the blender puts me off using it and I just eat the veggies as stew. I will also be able to make smoothers.

I forgot to post this one before. This is Sarah & Ben making their first vegan pizza dough using whole-wheat flour. They really enjoyed kneading the dough. Sarah kept eating it raw but then wouldn't eat the finished product (which I didn't get a photo of).

Cherie (a member here) and I along with my vegan coworker went to NYC this past Tuesday and ate lunch at Red Bamboo Brooklyn (www.redbamboobrooklyn.com) then went to a movie in Manhattan and had dinner at Foodswings (www.foodswings.net). You can see what Cherie and I ate at Red Bamboo on her food blog here (http://utopiankitchen.wordpress.com/). We split the Seoul Pancake and the Tofu Satay. I had the Willy Bobo sandwich as my main, a vegan Cubano sandwich. :yum:

the yellow stuff is a curry sauce (package too), but it's too sweet imho
And white Pandan rice, I normally don't buy white rice, but this is fairtrade, that's why I buy it in the regular supermarket :)

Funny regarding your comment about white rice. I never buy it either but yesterday, I saw some organic white rice at the Asian market and thought some white rice would be nice w/ pigeon peas one night this week so I bought a bag. Oh, and another nice plate. :artist:

It's warm today here, it reached 79F ! :o
And because of the heat, I didn't want to make a normal warm dinner, and made something up :)
boiled potatoes, cooled down a bit, with grated carrot, bellpepper, yellow corn, kidneybeans, spinach, some green olives, and a simple dressing of olive oil, lemon juice, garlic, pepper and salt.

The bananas are about the same price, I converted it to dollars, $3.38 dollars for 4lbs or 85 cents a pound. I just paid 79 cents a pound for organic, fair-trade.

Two slices of sourdough bread, with a "veggie meatball" on it (it's not really a ball), with mayo and ketchup.
Basicly it would need some lettuce and some fried onionrings, but it's just for me alone, so the basic idea will do :D
