I bought a raw food cookbook and I've been browsing the internet for raw food recipes. A lot of recipes contain a lot of lemon juice, which I'm sensitive to. Is there a raw replacement for lemon juice in recipes? I was thinking vinegar or apple cider vinegar but are they raw?

I believe Bragg's apple cider vinegar is supposed to be raw, Tigerlily, but I recall some questioning about whether it really is truly raw from the raw foods community. Still, you use so little of it compared to what you are putting it on, it probably isn't worth worrying about. You can also make a very sour liquid using the dried pulp of the tamarind fruit. You soak the pulp in water and use the resulting liquid. Its popular in Thai cooking. I don't know how much luck you will have finding it where you live, though. You can find it in Asian markets around here. If you have a juicer, juicing Granny Smith apples would yield a sour juice, too.

Pure, unsweetened cranberry juice is getting to be easily available in markets now, and that's another good sour juice that would substitute for lemons.

Are you sensitive to limes as well? You could try lime juice.
