I'm going to make a walk to the middle-eastern store down the street in 10 minutes (my lunch hour) and have the make me a falafel then make the walk back to work to eat the falafel along with a raw chopped kale and grated carrot salad topped with lime juice/walnut oil/garlic/sea salt dressing that I made this morning? :D

I just ate the best sandwich (yes, I had my lunch at 11am :o ). It was ezekiel sprouted grain bread with smoked tomato field roast slices (vegan deli slices made with wheat gluten, wine, veggies, garlic and other yum), white kimchee (fermented veggies), mustard and vegenniase. It was similar to a reuben but better. I'll have some of my raw kale and carrot salad after lunch (need to go shopping, :blecch: )

My 13 year old just had a great after school 'snack'... 1 large gluten-free chocolate pecan brownie with unsweetened soymilk, Cafix coffee substitute and Soy delicious vanilla ice cream. :o She's been mostly raw lately and needed a 'treat' :D
I had an entire small basket of strawberries and some unsweetened soymilk, blended. It was really good!

Cauliflower and tofu fry, with a few drops of soy sauce. Then raw cucumbers. (I love raw vegetables!) The cauli had been boiled earlier. I simply found a way to use what had not been eaten :p For frying I used the oil that came with the tofu.

Going to make Pizza very soon when i get of my big bottom. Made lots of new things this week because of the weather change. Yes we do have sunshine here in the uk :excited: so i have been making potato salad, rice with sundried tomatoes but leaving it to cool for later. Oh i made a flan. It took about 2 hours to cook and prepare but it was worth it. Will post recipe soon. Never been good at flans but i was amazed when it was edable :eat:

I'm making what's know in our home as, "Green Stuff", a mixture of some sort of lentils or spit peas, brown rice, garlic, and an assortment of veggies but always peas then finished with tahini and nutritional yeast-all organic. This is a daily staple for the kids but we've been out for a few days because of a lazy mommy :o and a non-motivated daddy. :dizzy:

I just made a 'brunch' of silken tofu, cauliflower, green beans, broccoli, carrots, peas, corn and garlic with coconut milk, Thai red curry paste, nutritional yeast and shoyu. Imade a small pan full and The Giant had a very large bowl and I had a medium sized bowl.
I wish I had more! :(

I'm making a huge dent in the large salad I brought to work which contains:
sauteed organic kale with organic carrots and garlic, red leaf lettuce and a can of fava beans covered in a homemade dressing of tahini, lemon juice, Bragg's liquid aminos, dried parsley and an enormous garlic clove!

I just made breakfast soysage sandwiches :eat: Oh so good!
A whole wheat sesame seed bun with red onion, lettuce, tomato, avocado, German mustard, ketchup, Vegenaise and a 'soysage' patty :nanakiss:
My daughter and I had one and The Giant had 2 :) We all had a glass of Silk Enhanced with it too.

Anyway, I just made sauteed fiddlehead ferns. They look like alien species. Some were good and some were bitter but I just read online that I was supposed to have cut off the brown tips. Oops.

About 15 hours ago I was making my famous vegetable stew. One onion, one large potato, On carrot, a handful of cabbage leaves. When it was done I poured off the water into a cup and then mixed in a couple of teaspoons of olive oil. Extra virgin, of course. Spanish. Then I dolloped the mixture on to a couple of slices of wholemeal bread, which were already spread with margarine and tahini. I used to use a stock cube to give the stew extra flavour but it never tasted nice. The olive oil gives it a nice flavour and it doesn't need anything else.
The cabbage I have just now is called Sweetheart. Quite tasty. Sometimes I use Brussel's sprouts or broccoli as the green ingredient.

semi raw soup
Pumpkin, broccoli and tomatoes, lemon juice, and oregano herbs in the food processor and "puree" abit, then heat it till a bit of vapour comes off it (not boiling) (this was lunch)

A bit of rucola, some lollo bionda lettuce (iirc), some shredded carrot, some corn and tomatoes and a mix of roasted sunflowerseeds and pumpkin seeds, a simple lemonjuice/olive oil dressing, that's it

I'm making some raw granola. During my recent trip to San Diego I had some fresh fruit bowls with granola so I thought I would try my hand at making some raw granola. I'll eat it tomorrow with some sliced watermelon, banana and strawberries.

I'm eating a BIG salad I made this morning composed of: thinly sliced organic zucchini (courgette) marinated in organic lemon juice and organic olive oil, chopped organic cherry tomatoes, artichoke hearts, torn boston lettucce, chopped organic kale and organic black beans. This is one of the best salads I've eaten in ages. I wish I took a photo of it. I went for a 1.5 mile walk during my lunch hour and the salad hits the spot.

The marinated artichoke hearts are very tasty. These ones were frozen then defrosted in the fridge. A bit bland but nice. Artichoke dip is good.

Artichokes are awesome. We put them in pasta and on pizza. I used to eat them with a mayonnaise dip or butter. I haven't tried them with any kind of vegan mayo but maybe I will soon.

Blueberry Muffins!
Blueberry Muffins
1 cup multigrain milk
1 cup flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/4 cup margarine or shortening
1/2 cup brown sugar
1 tsp vanilla extract
1 tsp fresh lemon juice
1 cup fresh blueberries
Preheat oven to 375F. Prepare muffin tin.
Cream shortening and sugar for no more than 2 minutes at high speed. Sift dry ingredients together. Add lemon juice and vanilla to multigrain milk. Add dry and wet ingredients alternately to creamed shortening and sugar mixture, mixing briefly after each addition just until blended. Gently fold blueberries into batter, spoon into muffin tins, and bake at 375F for 20 to 25 minutes. Makes 12 small or 6 large muffins.

These are the blackberries I picked when we went to Petaluma. There's nothing better than sweet ripe blackberries warm from the sun, plucked right off the bush and eaten right there. Its hard to have enough left over to make jam! :yum:
I'm so spoiled from having blackberry bushes I never buy store bought blackberries. There's no comparison.

I followed the recipe on the package of pectin for freezer jam, which is uncooked. I only had a pint of berries, rather than a quart, so I mixed the berries with half a cup of sugar, boiled 1/3 cup of water, added 1-1/2 teaspoons of pectin, a few teaspoons of the calcium water you make from the powder in the pectin package, and put it in the blender. Then you put it in jars and keep them in the freezer. My Gramma used to make freezer jam, and its so much fresher tasting than cooked jam, though I make cooked jam too sometimes. I used Pomona pectin, but I think any packaged pectin would have some recipes included.

Yep, I bought a tin, the cheapest I could find around here for almost 6 usd, and got me a oven temperature meter, which showed that 350 isn't gasmark 3, but more 3.5 :)

yeah, but that wasn't so successful.
at the end of the cupcakes, I had some batter left, and decided to use the bundt pan I bought for the "fun factor", and figured I didn't really have to butter it up cause it's non-stick.
maybe I tried to get the cake out too soon, or I had to butter it anyway, cause when I tried to loosen the cake from it, the cake broke in two parts and partly stuck to the bundt pan.
Better luck next time :)

For lunch today, I made seitan piccata along with kale and organic brown jasmine rice. I gave the kids plain seitan chunks. The piccata sauce was so delicious. I got the recipe from the Candle Cafe cookbook. Both the cookbook and restaurant are excellent. I also made tempeh salad for my work lunches this week and have a pot of lentil soup on the stove for Sarah's 3 times a day lentil soup cravings. Yesterday, I baked pumpkin oatmeal cookies with walnuts to bring to my friend in the nursing home. That recipe was from Vegan with a Vengeance. I'm not a huge fan of pumpkin but these cookies were tasty. I had to try a few of course to make sure they were good. :whistle: :yum:

I made a strawberry banana smoothie which the kids split while the baked potato wedges and lemon ginger tofu is baking in the oven. I guess I'll throw in some broccoli during the last few minutes of cooking for the veg.

Sarah was on a lentil soup kick a few months ago. She had to eat it daily. Then it became miso soup. Now she wants lentil again so I have a pot cooking on the stove. I loaded it with chopped carrots and took 1/2lb of frozen spinach, put it in the blender with a bit of the boiling stock, pureed it until it was really smooth then added it back to the soup pot. This way, the kids will be eating extra veggies. :thumbsup: I also threw in a handful of nutritional yeast for some B vitamins.
Updated to add: The soup was a huge hit with the kids. :chef: :yea:

I made a dinner on Sunday night with leftovers last night that Mr TVT said he would gladly pay $70 to eat in a restaurant. Dinner was: Tofu Balls (http://www.thenakedvegan.net/showthread.php?t=359&page=2), jarred marinara, spinach fettucini and garlic bread. I threw some raw kale on our plates as well just to boost the nutrition. Even though it was 85F outside, this was so satisfying.

I'm making tofu tacos tonight. The tofu is sauteeing now and then I'm adding a prepackaged seasoning mix (organic). I have organic blue corn taco shells that will be warmed up and a salad made w/ chopped organic tomatoes, cilantro, lettuce and kale. The cilantro, kale and lettuce is from today's farm pickings. I also have tofu sour cream if the kids (or me) are interested. This will be served with freshly cut pineapple.

I picked about 4lbs of basil today, 3 different kinds: regular, lemon basil and lime basil. I'm now making a huge amount of pesto. Some will be frozen, some kept in the fridge and some used on pizza tonight. I :smallheart: pesto.

Right now, I'm making lemon ginger grilled tofu (using my stove top grill) and I already made almond cookies and coffee chocolate chip cookies. I'm bringing a salad made from romaine and red leaf lettuce as well as green peppers we picked at the farm yesterday. We'll also have our usual apple, banana and avocado.

I decided to make a chili today to use up some of the older, dried beans I had laying around. The chili is going to have mung beans, soy beans, green split peas and then I'll add onion, garlic, bell pepper, sweet potato and lots of spices. I might make some tofu sour cream to go on top. The beans are soaking right now, I'm doing the short soak method.

:tantrum: The chili burnt on the bottom of the pan and the soybeans never fully cooked. Besides that, it tasted pretty damn good.
I am making homemade veggy broth in the slow cooker now. I keep peels, ends, trimmings of veggies in the freezer and when the bag fills, make broth. My first time trying to make it in the slow cooker. I figure around 12 hours on low should make a very tasty broth.

Just made your nutroast Tails - tis in the oven:thumbsup: thought Id cook it whilst here to keep an eye on it then can have it cold with hot pots and veggies and hot onion sauce. Dad will be in before me and Mum so will be fine with getting everything ready, but I know he will want me to cook nutroast and get it turned out of tin fine.
Mainly cooking it as Mum loves nutroast and Its her birthday, but Im not keen - we both think Its nice cold with hot gravy:uhuh:

This afternoon/evening, I made a pot of vegetable black bean soup (my own recipe), broiled citrus tempeh (my own recipe) and then steamed organic cauliflower served with the veg news cheeze sauce that I've posted here before. It was a delicious meal and lots of leftovers which I love.

Im terrible at making nut roast!
Am having a go at making lasagne now - just hope it turns out ok - white sauce is not my strong point and Im got some melting cheezely stuff to try yuck Its horrible - will be going on the bird table manky stuff!so used a bit of medium cheddar scheeze only one I like.
Wish someone would invent a decent vegan cheese!
Been looking at ideas for christmas food to cook boxing day for mum and me but not sure yet - Im not the keenest cook and our kitchens so small its hard work, but will make a shopping list for nearer the time:)

Well lasagne worked fine I did put yeast flakes in, Mum whos not keen on vegan cheese really liked the lasagne.
Sounds good freezing nutroasts - wish I liked them more - Aunts making one for Christmas lunch I think I gave a pile of vegan recipes last year, must ring her and remind her I cant eat cashews - feel awful saying that but they do make me feel ill!

I am making my Christmas dinner, which I will be eating tomorrow, since we are celebrating with my niece on Christmas Eve this year. I am starting off with a fruit platter of sliced starfruit, kiwi, and strawberries. Then I am having a salad of paper-thin slices of fennel and cara cara oranges, tossed with freshly cracked black pepper, salt, and some extra virgin olive oil infused with essence of blood oranges. I am also making smoky maple butternut squash soup, haricots verts with lemon and garlic, sauteed in the blood orange olive oil, chestnut and wild rice stuffing, and one of those apple smoked Field Roast sausages, simmered in vegetable broth til it gets tender, and then sauteed til brown and crispy on the outside.
I am almost done! Now I've got to bake a vanilla sponge cake, which I will tear into pieces and toss with vanilla pudding, homemade raspberry jam, and top with Soyatoo.
Its all for me too. My family wanted Mexican, so my stepMom asked me if I wanted a can of Amy's chili. Not for Christmas!!!

I made a trifle too which we had Boxing day eve - used some homemade blueberry muffins as the base then jelly and friut with custard topping as no ones too fussed with cream here.
Made chestnut/mushroom/red wine pate en croute for our lunch yesterday with roasties/sweet pot roasties/veggies/red wine gravy.
My aunt made vegan nutroast for Christmas day lunch which was nice with onion gravy.

Its a traditional Southern dish made from black eyed peas. They always have tubs of fresh ones this time of year, so they only take ten minutes to cook. I think the dried ones take much longer.
Anyway, while the peas were cooking, I sauteed half a large onion, chopped, in some olive oil, until they got cooked the way I like them, kinda brown, then I added the cooked peas, which probably amounted to about two cups, two cups of stock, and some seasoning. The recipe called for celery salt, but I didn't have any, so I added some Old Bay, which is a brand of mixed seasoning available here in the US, and some garlic flakes and freshly cracked black pepper, and let it stew. I don't usually add salt until after the dish is cooked. Its pretty yummy!

I don't think you can make tempeh from scratch, unless you have Koji spores or something (I think that's what they are). You get it ready made in packages near the tofu, or in Asian markets.

The first time I tried it, I bought it already made at a vegan cafe in NYC and it wasn't marinated or cooked very well. It was :blecch: I find that plain tempeh has to be boiled first for 10 minutes to remove the bitterness plus it holds a marinade better. My favorite recipe, though not healthy, are the tempeh wingz recipe that is posted on Post Punk Kitchen.

Hope you find some, I know we have has frozen chestnuts from both Waitrose and Sainsburys before Christmas.
Just finished big dinner - en croute dish was tasty served it with roast pots, onion gravy and several veggies, the cheesecake was not as 'set' as Id of liked but tasted good - Mum said more like a nice mousse on a biscuit base.

I had a large amount of leftover brown rice from takeout Chinese the other day so I threw that in a casserole dish along with frozen corn, frozen broccoli, grated carrot, shredded kale, chickpeas and a sauce made from tahini, veggie broth, lemon juice, garlic and spices. It is in the oven now. I hope the sauce evaporates and makes the dish creamy. :crossfingers:

Dinner tonight was scrumptious. I made dry-fried tofu then simmered it in a soy sauce/rice wine vinegar/agave/hot sauce/garlic/ginger marinade and served it with red couscous and sauteed kale with garlic.

I bought a bag of carrots a few days ago. Eight large carrots. I had three today. Just cooked carrots with gravy powder. Blooming horrible. I made three carrot sandwiches and ate the rest with a spoon.
I won't be doing that again.
I'll get some potatoes and leeks to have with the rest of the carrots.

So, tonight I think I'm doing a tofu and spinach scramble, to lay on a piece of toast. Hm, and maybe grits, too. I was in the mood for a southern breakfast this morning, and never got around to it.
My daughter LOVED the steamed veggies I made the other night, forgot to say. She's only 2 and a half, but she LOVES vegetables. She has those plates with 3 separations, to put different foods in, you know? Well, I put her veggies in 2 of those sections, and the rice in one, and sat down to eat the remainder of vegetables that I'd made myself. Before I even got my plate prepared, Daisy said, "Mommy more please? Yummy yum yum food, mommy!" :D

I made curry last night. I used curry powder, garlic salt, turmeric and black pepper. Heated them up in some olive oil, and then added water. Put in the spuds. Added half an onion ten minutes later. Then a carrot. Then some broccoli. It didn't taste or smell too much like curry but the hint was there. I should have fried some onion first with the spices or just before the spices. There was something missing. I'll check my mother's recipe. When I made curry from that, years ago, I used separate ingredients instead of ready-mixed curry powder.
I might get a coriander plant the next time I go shopping. I like fresh coriander in curry.

I'm making bubble and squeak.
I am boiling some potatoes. Then I'll add cabbage. And then a tomato for the last couple of minutes. Then I'll put them on a plate and drink the water. Then I'll put a bit of oil in the same pan, add some onion and gently fry it. Then put the spuds, tomato and cabbage back in and mix it all up to make the bubble and squeak. I'll have it on bread with tahini.

I've just had three slices of toast spread with tahini. I dolloped two cooked tomatoes and a small tin of baked beans on top, mixed with a bit of garlic salt and olive oil. I had heated up the tomatoes and bean mixture whilst the toast was cooking.
Then I had six Brazil nuts and some raisins for pud.
I am waiting for the water to nearly boil so I can make a cuppa. Then I'll have another cuppa and some more raisins.

I tried to make some quickbread yesterday, but got the wrong informaton off of the internet. The ratio of water was way too much, and I was supposed to use baking powder instead of baking soda, because I only added water to it. But I still tested it out by adding regular flour to the pound of organic stuff I had overmixed, and figured I might as well add more baking soda too. That was a bad idea, because it turned out bitter. :craziest:

One pound (two cups) of flour + 6 ounces of water made that much bread by weight.

Of course, but mine does not taste like cake and it has the texture of bread. Not that you have to like it (even in your imagination), I just want to give an accurate description of the quick bread. It tastes like its ingredients, and the difference in flavor from typical bread would be due to omitting yeast.
Anyway, I got a set of cookie cutters for quickly shaping the dough into bite sized pieces (not that it tastes like a cookie).

I just began making bread after visiting a Trader Joe's store and finding a loaf of bread that had no yeast listed in its ingredients. It turned out that they cultured it in the flour as wild yeast (or something), so they do not have to list it. But that got me interested in making quick bread. The process is so much faster and it is also less expensive (besides, I find it easier to digest). The energy it gives me is the same as that from traditional bread, since the bulk of its calories are in the flour.

I'm made bread without adding yeast. The type you bought from Trader Joe. Sourdough is the name of it.

Yeah, but I do not really seek adding sour flavors to my grains, although I had never really thought about that until making bread. I tried to make some quickbread yesterday, but got the wrong informaton off of the internet.
I was just thinking about that again today. The one bit of information I had not changed was that of making a depression in the flour mixture, for the baking powder, and then pouring water over it.
But that makes it bubble mostly outside of the flour, when the purpose of adding baking powder is to have it bubble within the flour. Duh. I do not see how it could work better as a volcano than being evenly mixed into the flour before water is added. :skeptical:
So I have changed my preparation accordingly. Thanks a lot to the chef who wrote those oxymoronical instructions.:chef:

needs baking powder instead of baking soda, given the ingredients
putting the leavening agent in a hole would cause it to react into thin air
letting the dough rest or rise has no effect, since it only rises while baking
putting a bowl of water in the oven doesn't seem to do much (although I did misread degrees C as degrees F)
Something was lost in translation there. :skeptical:

Thanks, I need to use them more often too (they are holding up well).
Yesterday I picked up four large cookie sheets, to bake enough bread for a week at a time, and they all fit in the oven on just two racks. I had to get the heavy duty kind without extra edges all around. Luckily they were on sale for about 50% off.
Today I am going to mix up the recipe I posted, in four separate batches, and then bake them all at once (for the win). :thumbsup:

I have entered the next phase of bread making (blog post (http://sbfootage.blogspot.com/2011/09/quick-bread.html#9206688797558281770) updated). Most everything else I prepare is now being thrown into the bread, because it is much easier to eat on the go that way. So I am not a quintessential raw foodist, but I am soaking some raw legumes for the next batch, and the veggies do not exactly get charred in the bread baking process. I think that is the best I can do, all things considered (since ironically raw food consumes more resources on my part).:bhead2:
I also bought the biggest mixing bowl in the world, at a restaraunt supply store, so I can prepare the dough all at once. It is like 20 quarts or so (I could sit in it and use it as a snow sled).

I just cooked my first vegan meal, the past few days since I have started have included a lot of fruit covered with peanut butter while I was thinking about meals.
Lentils mixed with celery, spinach, onion and potatoes and a pinch of salt, I had no veggie stock though so it is a little bland but the texture is perfect and it's nice to know that everything going inside my belly is good for me.

I am making another batch of compound quick bread. :wheatbread::tossed salad:
The last batch I made started to smell like banana bread after two weeks in the fridge, and there were not any bananas in it! Needless to say, it did not last much longer before turning into a bread monster.

Ah! But it does follow because it means that I am amazed. Amazed that there is such a thing as an interpunk. You next need to make some foot-of-the-stairs bread for those times when your mental equilibrium needs rebalancing.
Getting back on topic, I made an interesting dish yesterday. My usual baked beans and tomato on toast. I also included two carrots. I've done that before but this time I added a stock cube as the carrots were cooking. It was quite tasty.

I have just had some veggie stew made with a large baking potato, half an onion, a carrot and some cabbage. And 5 slices of bread which I used to make sandwiches with some of the stew.
