I came up with this last night. If it's already been done, I just didn't know about it. It's very easy, simple and good.

Run peeled grapefruit through juicer (can save pulp in freezer bag in freezer to top a salad sometime later). This will be the "broth."

Add sliced bananas and grapes. The bananas smooth out the normally too tangy flavor of the grapefruit.

Amy's Yummy Salad Soup

Blend:
one whole peeled cucumber
2 stalks of celery
1/2 red bell pepper
one big handful of red leaf lettuce
1/4 avocado
1 Tbl dulse
1/4 cup of orange juice

***Comments:
It was so tasty and an easy way to eat a salad. The celery and dulse seaweed (powdered) gave a slightly salty component, and the orange juice gave it the slight acid component it needed. - Amy

GAZPACHO


INGREDIENTS:
2 cups fresh tomato juice
2 garlic cloves, chopped
2 tsp. olive oil
1 Tbsp. raw apple cider vinegar
Salt and freshly ground pepper, to taste
1/4 cup seeded and diced cucumber
1/4 cup finely diced green bell pepper
1 plum tomato, seeded and finely diced
1/4 cup red onion, finely diced
1/4 cup zucchini, finely diced

DIRECTIONS:
Place tomato juice, garlic and olive oil in blender and
process until garlic is pureed. Add vinegar, then blend to combine. Season to taste with salt
and pepper. Pour into covered container and chill well,
from 2 hours to overnight. Check seasoning and adjust,
if necessary. Divide soup among 4 serving bowls. Add 1
tablespoon each of diced cucumber, pepper, tomato, onion
and, if desired, zucchini.
Yield: 4 Servings

I'm Not Feeling Well Soup

1/2 avocado
1 cup kale
1 carrot, chopped
1 celery stalk, chopped
1/2 lemon, juiced
1-2 garlic cloves or 1/2 shallot
Water as needed

Puree everything in the blender until smooth. Add water as needed to make a smooth puree. If I had parsely on hand, I would have added a few tablespoons of parsley as well.
