On a temporary job assignment and living in a hotel with a little kitchen. The pots and pans are 2nd Hand Store rejects, the cups are paper, the knives are dull, the glasses are plastic. There is no counterspace and while I do have a stove, refrigerator and microwave, and even a4 cup coffee pot, cooking anything more complicated than a few ingredients is tough. Does anyone have any quick go to meals that require little effort.

I'm not a great one for cooking so I can't be much help. I hope some of the others soon chip in with advice. A really quick and tasty meal (well, I think it's tasty) is baked beans and tomatoes on toast, with some veg added such as carrots or broccoli. It only takes a few minutes to cook.

For breakfast, there's porridge (oatmeal). Scrambled tofu mixed with a bit of soya milk and herbs.

If you can spend a bit more time cooking, there's vegetable stew. I cook it all in one pot. Have you looked in the recipe section of the forum?

Actually folks who don't cook are the best to ask as they have meals that are easy to put together. I love baked beans. What brand do you use?
Last night I made a pot of black bean soup. LOL, 2 cans of beans, one can of veggie broth and a little cumin and salt and pepper. Garnished it with some green onions. Wish I could find some vegan sour cream cause that would have topped it off nicely.
I will check the recipes.

I buy Heinz or a supermarket own brand. I sometimes put garlic salt in but I've run out of it. As others here know, quite a few of my meals consist of toast and tahini.

Something quick I have made before is a mixture of things like red and yellow peppers, tomato, carrots and broccoli all cooked together with a little water. I put the carrots in first because they take longer than the other things. I might mix in tinned sweet corn or green beans or bean sprouts or lightly fried mushrooms. Anything that is quick to cook. I might put in a stock cube or fried onions.

And I will nearly always have it served on bread and tahini.

Can you get tins or packets of soup from a health food shop? They make a quick meal with some crusty bread. You could add veggies to it that are easy to cook.

If you are near a Trader Joe's, they sell lots of accidentally vegan Indian dishes in those aseptic packages. You just boil a pot of water and put the package in til it's hot. I love to take those when I go camping.
