I love cooking, finding new recipes and trying them out - making my own blah blah blah...
What is your favourite vegan recipe book? I'm looking for new ideas to try out as I am a vegan in the making :)
Also I :smallheart::smallheart::smallheart: greek cooking and food - does anyone know of any recipes or cook books for this (apart from Vegan Taste of Greece, already looked at that one)

The only one I have is Vegan Cooking by Leah Leneman.
I found a Greek recipe I copied from somewhere, some time ago:
Spanakopita
Ingredients:
1 medium onion, finely chopped
2 green onions, thinly sliced
2 tablespoons olive oil
1 10 oz. package frozen chopped spinach, thawed, drained and squeezed dry
1 package firm tofu, drained
1 tablespoon fresh dill OR 1/2 teaspoon dried dill
1 tablespoon lemon juice
1/4 teaspoon both salt and pepper
1 16 oz. package vegan fresh or thawed frozen phyllo dough
1/2 cup melted vegan margarine
Directions:
1. Saute the onions in the olive oil over medium heat until tender and golden. Remove skillet from heat.
2. Place tofu in a mixing bowl and crumble with a fork. Add dill, lemon juice, salt and pepper, onions, and spinach. Stir thoroughly to combine. At this point I usually taste the seasonings and adjust until it is just right.
3. Preheat oven to 350 F. Remove half of the phyllo dough from the package and cover the rest with plastic wrap and/or a damp towel to prevent it from drying out. Brush the bottom and sides of a 13" X 9" glass baking dish with the melted margarine. Place 2 phyllo sheets in the dish and press in lightly. Lightly brush with margarine (make sure to get the edges) and top with 2 more sheets and continue repeating until you have used half of the package of phyllo dough.
4. Spread the spinach mixture in dish on top of the phyllo dough. Top with remaining phyllo dough in the same way as before, tucking or rolling in the excess edges when finished. Bake 45 minutes until golden and filling is hot. Let stand 10 minutes before serving.
Serves: 8 (as a main dish)

Well, I don't really have a favorite Vegan Recipe book, but I do use quite a few from Vegan Planet.
Also, while not necessarily Greek cooking specifically, have you looked at The Mediterranean Vegan Kitchen by Donna Klein? I use a few out of that too. Plus I have a bunch of other ones. I use at least a few from all of them.
There is a web site called http://veganyumyum.com/ and I just bought this book called "30 minutes vegan". Here is a link : http://www.amazon.com/30-Minute-Vegan-Delicious-Healthy-Everyday/dp/0738213276

Bryanna Grogan has some great books books out ( http://www.bryannaclarkgrogan.com/page/page/590181.htm ) including a fantastic Italian (sorry no Greek)
Alicia Silverstone has some amazing recipes in her book The Kind Life.
My favorite is her chocolate peanut butter cups They're addictive! ( http://www.sweetvegan.net/peanut-butter-cups/ )
And How it all Vegan is pretty good.
Also, I have all the Moosewood cookbooks and love them. They aren't stricktly vegan but the recipes are easy enough to modify.

For Baked Goods - HANDS MUTHA PHUCKIN DOWN - Baby Cakes
Baby Cakes is like the biggest NYC Vegan/Allergenic friendly bakery - ever
There are gluten free cakes - and virtually everything that is sugar (since most sugars are white refined thru animal bones - so I've been told - unless stated otherwise) is replaced with delicious Agave
As for regular Veggie Cookbooks:
I got me a 1000 Low-Fat Vegetarian recipes which clearly states whichc items are strictly Vegan and which are Lacto and/or Ovo Vegetarian.
Usually i just replace all the Lacto-Vegetarian stuff with subsititues - those are usually esaily to replace - Ovo on the other hand I stay away from
My sister also bought me The Complete Vegan Kitchen - I havent tried that out since I got it recently, but will definately be making hte Vegan Enchiladas this weekend - tell ya'll how it works out
Oh and for websites:
Fat-Free Vegan Kitchen Pretty simple stuff - but I HATE how it doesnt provide caloire counts >.<
