My boiled sweet potatoes go sour after a week, so I peel and cook a week's worth at a time. Then sometimes they sourify after a couple of days! I'm not sure if there's anything that can be done about it, other than cooking fewer of them more often...

I think I'll try baking them this week. It may be that overcooking is a problem when boiling.

I don't know how you could overcome this problem. Have you tried freezing them?
I always cook things as I need them. Not that I cook very often.

I guess I could put a popsicle stick in them, but seriously I don't even have a freezer. :fridge:

Yeah, baking and slicing them turned out well; now those potatoes are sweeter than ever. :dribble:
It may have been that they took much longer to cool after boiling, which allowed bacteria to flourish; the same thing happened to a large pot of split peas I ruined. I've switched to boiling chickpeas, since they don't form as a mass of lava... :extinguish:

My latest experiment lasted two weeks! I diced them before cooking and then distributed the batch into 14 separate containers for storage. Now I'm trying the same with organic red potatoes. :chef:
