VEGAN FRUIT JELL from http://veganlunchbox.blogspot.com/

Using agar alone makes a rubbery jell. If you add some starch it makes a more delicate jell.

4 c. sweet fruit juice of choice

OPTIONAL: sugar or other sweetener to taste if juice isn't sweet enough

pinch salt

OPTIONAL: some grated citrus rind.

1/2 tsp. vanilla or other flavoring , if desired

2 tsp. agar powder (OR 1/4 c. agar flakes)

1 T. cornstarch dissolved in 1 T. water

OPTIONAL: fresh fruit to add to jell

Sprinkle the agar over the juice (with sweetener, salt and any flavoring). Let soak a few minutes. Then cook over medium heat til boiling. Agar powder just needs to simmer for a minute; flakes should simmer at least 5 minutes. Add dissolved starch and stir in. Boil for 30 seconds.

Pour into a bowl or small bowls. Place in refrigerator. When half-jelled, you can stir in fruit. Let set until firm and cold.

I've been reading her blog for months now and love it. I love the ideas, the presentation and the verdict. It's so great that everyone can see what vegan children eat though Shmoo eats quite a bit of heavily processed foods which I hope to avoid with my kids. The most processed food they eat now is soy yogurt (Sarah) and whole-wheat pasta.

Oops, that was completely off-topic :o but so's this. What happened to your bog, Delicious?

She seems to have gotten her first troll not too long ago. :troll: :order:

It must be tough having to send your vegan child off to public school. I guess that's why she adds processed foods to her son's lunches, so he doesn't feel too weird. Its a shame; its everyone else who should feel weird for eating dead animals! :dizzy:

I found this recipe on http://veganlunchbox.blogspot.com and made it today. It was a huge hit with the husband, he ate 2 sandwiches and the kids ate about 5 teaspoons each of a mushed roll with the lentil mixture on top. :hungry:

Sloppy Lennies

1 cup red lentils rinsed
2 cups water
1 cup smooth tomato sauce
1 tablespoon soy sauce
1 teaspoon basil

Mix all of the above in a pan, bring to boil then simmer on low for 30 minutes. Serve on a roll, bun or bap. I served it on Ezekiel sprouted grain hamburger buns which are absolutely delicious. The lentils thicken up and can be eaten like a messy sandwich.
