View Full Version : Recipes needed suitable for a sick person.

I desperately need ideas for what to feed my housemate. She has a degenerative illness - which she has asked me not to talk about - that makes her shaky and sometimes she finds it hard to chew and swallow.

In winter I can steam & mash vegetables, and she likes those mock meat creations - but right now it's too hot for a lot of hot food. :boil:

The recipes / ideas need to be nutritious (obviously), low in salt / sugar / fat, reasonably quick & easy to prepare (since I'm not a good cook), and above all, easy to eat. The shaking makes her spill a lot of food which is humiliating even though I try to make light of it. She can't taste very well, but she doesn't like hot / spicy food.

Her new favorite thing is crushed fruit in (vegan) jelly.

Finger food would be good but she doesn't like a lot of bread.

Any ideas would be gratefully considered. :)

Gosh I can't think of specific recipes, but maybe you could just put things into the blender and make smoothies? Cold rice pudding, without lots of sugar, is nice for breakfast, but you'll have to cook the rice first. Maybe finely grating and mincing raw salad ingredients would make it easier to eat a salad. You could maybe puree some of the salad with some tofu and add the seasoning of your choice and some flax oil and use this as a dressing for the rest of the vegetables.

How about chopping as many root veg as you can find boil it in a saucepan with some veg stock, when cooked, blend. makes lovely thick soup.

She could dip toasted soldiers into it until soft?.

I would go with the smoothie idea. Bananas as a base, with other fruits for different tastes, make very yummy, filling, easy-to-eat blender food. (Frozen bananas give a very good result.) You can add flax seeds, soaked or ground and/or soaked dates. In this weather you can't beat a good smoothie! :sun:

You could still make steamed and mash veggies, to be eaten cold. With various herbs such as oregano, corianda leaves, basil, etc.

Thick dahl, when cold, can be cut into slices. Not quite solid enough to be picked up with the fingers but a lot more manageable than the hot soupy type.

You can also add avocado to smoothies for extra fat and nutrition. You can cook some polenta (thick corn meal), let it cool then slice into rounds and use that for sandwiches. Fillings can be tofu salad, nut butters, roasted veggies, tempeh. Cold soups, even a fruit soup are easy.

Its made with lentils and indian spices. usually spelt dhal.

As an old India hand, I can confirm that dhal is usually spelt dhal. It doesn't usually contain spelt though.

Thanks. The finely chopped / grated salads are a hit, and the smoothies, and the cold rice for breakfast with "creamy" soy milk and rice-malt syrup.
